Chicken Farcha

Chicken Farcha is a unique and popular Parsi chicken recipe that incorporates the beautiful aroma of spices with tanginess of lemon to offer a delish starter for every occasion.

Ingredients

  • 300 grams Chicken, boneless

For Marinate

  • 1 tbsp Ginger, finely chopped
  • 1 tbsp Garlic, finely chopped
  • 2 tbsp Lemon Juice
  • ½ tsp Ceepee Red Chilli Powder
  • ½ tsp Ceepee Coriander Powder
  • ½ tbsp Ceepee Garam Masala Powder
  • 1 tbsp Ceepee Chicken Masala Powder
  • ½ tsp Black Pepper, crushed
  • Salt to taste

For coating

  • 2 Eggs
  • Oil for Frying
  • ½ cup Semolina
  • ½ tsp Ceepee Red Chilli Powder

Method

  1. Wash the chicken thoroughly and cut it into pieces of about 50 grams each.
  2. In a bowl, mix all the ingredients for marinate and mix evenly.
  3. Add chicken to the bowl, coat each piece with marinate properly and set aside for around 15 to 20 minutes.
  4. While chicken is kept aside, in a bowl break both the eggs and add chilli powder to it. Beat eggs properly.
  5. Heat some oil in a deep frying pan.
  6. Coat each piece of marinated chicken with breadcrumbs and then with egg mixture.
  7. Deep fry chicken until it is properly cooked and turns golden on outside. Serve fresh and hot with fresh salad and chutney of your choice.

Sali Murgh

A delish chicken curry made in authentic Parsi style with assortment of spices and topped with crispy fried potato sticks.

Ingredients

  • 1 kg Chicken, cleaned, washed and cut into cubes
  • 2 medium sized onion, finely chopped
  • 1-inch Ginger, finely chopped
  • 3 cloves Garlic, crushed
  • 1½ cup Tomato puree
  • ¼ cup Yogurt
  • 3 tbsp Oil

Spices

  • ¼ tbsp Ceepee Turmeric Powder
  • 1 tbsp Ceepee Jeera Powder
  • 1 tsp Ceepee Kashmiri Lal Mirch powder
  • ½ tbsp Ceepee Garam Masala
  • 1 tbsp Ceepee Chicken Masala Powder
  • ½ tsp Sugar
  • Salt to taste
  • 4 Dried Apricots, deseeded and soaked in warm water
  • Water/ Chicken Stock
  • Chopped Coriander leaves for garnishing
  • Crispy Potato lachchas or Sali for Garnish

Method

  1. Heat some oil in a deep pan. Once hot, add ginger, garlic and chopped onions. Sauté until they turn golden brown. Remove extra oil by straining.
  2. Next, add tomato puree and let it cook for 4-5 minutes.
  3. Add all the dry spices including haldi powder, red chilli powder, garam masala and chicken masala. Sauté until the oil separates.
  4. Add sugar and soaked apricots and cook for about 2-3 minutes.
  5. It is time to add chicken and coat it nicely with masala. Add salt to taste.
  6. Add water or chicken stock, enough to cover the chicken partially.
  7. Cover the pan and let the content simmer for around 20 minutes.
  8. Once chicken is cook and gravy has thickened to desired consistency, add jeera powder and mix well.
  9. Garnish with coriander leaves and crispy Potato lachchas. Serve hot with roti, paratha or any flat bread.

Parsi Chicken Bafat

A lip-smacking Parsi dish that can be prepared with any protein offers a delish combination of fragrant spices, potato chunks, and shredded coconut with jaggery and vinegar.

Ingredients

  • 400-gram boneless chicken
  • 2 large potatoes, diced into 2-inch pieces
  • 1 large Onion, finely chopped
  • 1½ tsp Garlic Ginger paste
  • 3 Tomatoes, finely chopped
  • 2 tbsp Jaggery
  • 1 tsp Tamarind extract
  • ½ cup Shredded Coconut
  • 2tbsp Cider Vinegar
  • 2 tbsp Coriander leaves, chopped
  • ½ cup water
  • 1 tbsp Ghee/Clarified Butter or Oil
  • 2 tsp Salt

Spices

  • 1 tsp Ceepee Garam Masala
  • 2 tsp Ceepee Chicken Masala Powder
  • 1½ tsp Jeera Seeds
  • 1 tsp Ceepee Kashmiri Red Chilli Powder

Method

  1. In a deep pan, heat some oil. Once oil is heated, add jeera seeds and chopped onions. Sauté the onions on high flame until it get dark brown in colour. Stir occasionally.
  2. Add ginger and garlic paste and cook until the raw smell of garlic is gone. Add shredded coconut, potato, chicken, powdered spices and salt. Mix thoroughly and cook for 5 to 7 minutes on high flame stirring occasionally. Add a tbsp of water as per requirement to cook coconut and spices.
  3. Once you start smelling the aroma of spices put in tomatoes, jaggery, tamarind extract and cider vinegar. Also, add a cup of chicken stock or water. Mix everything well.
  4. Cover the pan with lid and cook for 10 to 15 minutes on medium heat until the chicken and potatoes are cooked. Add water as per requirement.
  5. Adjust consistency until you get thick gravy. Adjust salt and transfer the dish to serving bowl.
